Meal Prepping Week 1

I did an inventory of my freezer today and wanted to write down what I have and what I plan to do with it.  I would really like to have some freezer meals ready to go so I don't have to spend as much time cooking during the week (because I don't usually have it.)

Meat

  • Chicken Breasts (6)
    • Prepped today: Honey Sesame Chicken
    • Prepped today: Fajitas today.
    • I would like to make a crock pot curry recipe, but I am out of coconut milk.
  • Kimball's fish (Kimball caught this over the summer.  There are about 3 small fillets left.)
  • Italian Turkey Sausage (5)
    • Minestrone soup?
  • Breaded fish
  • Rotisserie chicken (4)
  • Ground turkey (2)
  • Pork roast (3)
  • Turkey kielbasa
    • I plan on doing a sheet pan dinner like this one, but with peppers and maybe zucchini.
  • Chuck roast


Prepared Meals (stuff that is already in the freezer)
  • Teriyaki pork chops
  • Chicken thighs (seasoned and ready to roast)
  • Orange chicken
  • Beef enchiladas (need sauce and cheese)
  • Baked spaghetti (needs sauce)
  • Pumpkin pasta sauce
  • Shrimp and ham gravy
  • Pizza (3)
Well, that should get me through the week.  I have a bunch of celery in the fridge that needs to be used up, so I think I with chop it and freeze it for soups.
