Meal Prepping Week 1

I did an inventory of my freezer today and wanted to write down what I have and what I plan to do with it.  I would really like to have some freezer meals ready to go so I don't have to spend as much time cooking during the week (because I don't usually have it.)

Meat

  • Chicken Breasts (6)
    • Prepped today: Honey Sesame Chicken
    • Prepped today: Fajitas today.
    • I would like to make a crock pot curry recipe, but I am out of coconut milk.
  • Kimball's fish (Kimball caught this over the summer.  There are about 3 small fillets left.)
  • Italian Turkey Sausage (5)
    • Minestrone soup?
  • Breaded fish
  • Rotisserie chicken (4)
  • Ground turkey (2)
  • Pork roast (3)
  • Turkey kielbasa
    • I plan on doing a sheet pan dinner like this one, but with peppers and maybe zucchini.
  • Chuck roast

Prepared Meals (stuff that is already in the freezer)
  • Teriyaki pork chops
  • Chicken thighs (seasoned and ready to roast)
  • Orange chicken
  • Beef enchiladas (need sauce and cheese)
  • Baked spaghetti (needs sauce)
  • Pumpkin pasta sauce
  • Shrimp and ham gravy
  • Pizza (3)
Well, that should get me through the week.  I have a bunch of celery in the fridge that needs to be used up, so I think I with chop it and freeze it for soups.

I have migrated

This post is to let you know that I have migrated to Instagram and Chatbooks.  I have liked posting on the blog, but it is hard to keep up and since I was already instagramming anyway . . . it seemed inevitable.  I thought about waiting for the new year, but then I thought why?  Live in the moment, seize the day!  In the end, it's just easier.

October 31: Happy Halloween!

October 31.  Abby won't let me comb her hair even though it get in her eyes.  I must have been the same at that age.  Grandma and Grandpa Hansen came over to watch us get ready for trick-or-treating.  Stan wanted face paint even though he had a mask.  We had a blast roaming the neighborhood for candy.  There was a trunk-or-treat around the corner where we got some pictures taken.  One neighbor had a fire breathing dragon at his house and another who is a photographer was taking pictures in his driveway.  We came home with more than 10 pounds of candy!

October 24-30: Pumpkins and Costumes (And some long good byes for Nana and Papa)

October 24.  On Saturday the kids had a practice for the Primary Program.  We spent the evening with Brad and Heidi and I have no video evidence.

October 25.  Sunday morning was the Primary Program.  Our friends Sierra, Oliver and Emerson came.  Nana and Papa did too.  But I forgot to take pictures.

October 26.  On Monday Kimball finally convinced me to carve pumpkins. We scraped the guts out before dinner so we could carve with Daddy for FHE.

October 27.  On Tuesday I was able to get a new pair of boots from Courtney at Cents of Style and then she, Mom, Char, Tilly, Luke, Stan, Abby and I went to lunch.  Tilly does a really good job of making a mess and the rest of us had fun catching up.

October 28.  On Wednesday Stan and Emerson had their Halloween party at preschool.  Kimball had a sore throat and so stayed home where he made a pumpkin head out of his clothes.  For dinner we went to Burger King with Nana and Papa to have a last outing with them.  We are going to miss them so much while they are gone to Guatemala.

October 29.  On Thursday Stan got some cavities fixed including one with a crown.  He is unnaturally proud of his silver tooth.

October 30.  On Friday we went to Kimball's Halloween Parade.  Abby and Stan wanted to dress up as well, but Stan wanted to be a tiger so he could have his face painted.  However, he wouldn't let me take his picture.  In the afternoon we picked up Papa who had to drop off the Extera at James' in Lehi.  Then we had pizza at Charlotte's and were able to take a last picture with Nana and Papa since we forgot on Wednesday.

October 17-23: New Haircuts and other Shenanigans

October 17.  Friday night the kids got to spend the night at Grandma and Grandpa Hansen's  Do you know what that means?  4 Wheeler rides on Saturday morning!  Stan also finally let me cut his hair.

October 18.  Bryce found some leg crawlers on Sunday.  After church Bryce watched the kids scooter while I made Relief Society visits.  The weather has been pretty nice this fall.

October 19.  On Monday these sillies went adventuring which involved laying under Mom's quilt on the floor.

October 20.  The kids love to play on the playground after picking up Kimball from school.  (Mom, not so much).

October 22.  Abby asks for a picture when she climbs on the spider.

October 23.  I stayed up late on Thurday night making these gratitude books for the Young Women on Thursday and then on Friday we went to the ward Halloween Party.  The kids were pretty excited to dress up.

October 10-16: Lots of Face Painting and Cherry Hill

October 10.  Saturday morning we were able to attend Ellie's baptism.  After we went to a birthday party for our friend Victoria.  The kids got their faces painted and loved it!

October 11.  Sunday after noon this crazy clan decided to dress the same.  And Stan drew on his face and Abby's.  In the evening Nana and Papa came over so that Papa could give me a father's blessing before they leave for Guatamala.  What a special experience!  I am so grateful for the priesthood.

October 13-14.  On Tuesday evening I had my Relief Society crafting night.  I didn't get a chance to finish the witch's boots so the kids helped me paint them and a friend came over on Wednesday so we could finish our projects.

October 15.  On Friday I ate this popcorn for breakfast because it is THAT good.  Then we spent some time with Grandma Hansen at Cherry Hill and their Halloween festivities.  We always have such a great time on our outings.
